Week 4: Thanksgiving Break

Over the Thanksgiving break, we decided to freeze our boneless chicken wings to see how they would work once they were reconstituted. Once arriving back to campus and heating the boneless wings up, we found that they did not reheat well with the sauce at all. It ended up altering the texture and not tasting as well. As the sauce played a vital role in the success of our product, we needed to devise a plan to use the sauce while maintaining quality. We decided to ship the product as the completely fried boneless chicken wings and the sauce packaged separately but inside the container. Once the product made it into someone’s home, they could dethaw the sauce in warm water while they cooked the nuggets.

Over the holiday break, we also began to compare prices at local grocery stores to compile an average for similar products. While there, we also took note of what kind of packages they used, serving sizes, and nutritional information. The three products we compared were the TGI Fridays Honey BBQ Boneless Chicken Bites, Great Value Buffalo Style Wyngz, and Tyson Any’tizers Boneless Chicken Wyngz. The TGI Fridays product was priced at $4.98 for approximately 20 wings. That came out to 0.249 per wing. The Great Value product was priced at $5.14 for approximately 27 wings. That came out to 0.19 per wing. Lastly, the Tyson product came out to $6.98 for approximately 27 wings. That came out to 0.259 per wing. Based off of the data collected, we decided to price our product at $9.87 for a 50 count of the boneless Asian chicken wings. That comes out to 0.197 per wing. This will result in 10 servings per bag with 5 boneless wings per serving.

Lastly, we worked on our nutrition label over the break. We compiled our ingredients and the amounts in grams to formulate the different factors like cholesterol, fat, and calories to name a few. At this point in the project, we were basically fine-tuning the product and preparing it for presentation.
